INSTRUCTIONS
  1. Separate the egg yolks and egg whites. 
  2. Add the egg yolk, 1 tablespoon of Mama’s Chili Oil, 2 tablespoons of Four Season Scallion Sauce, and 1 tablespoon of Golden Shallot Oil to cold, cooked, day-old rice, mix well to ensure every grain of rice is coated in the egg yolk and sauce. 
  3. Add 2 tablespoons of butter and 1 tablespoon of Mama’s Chili Oil to a pan. Turn the heat up to medium and add minced white parts of the green onion. Sauté for 30 seconds. 
  4. Push everything to the side, and add beaten egg whites. 
  5. Let the egg whites sit for 20 seconds before scrambling. 
  6. Next, add the rice and sauté on high heat for 2 to 3 minutes. 
  7. Finally, add the rest of the green onion and sauté on high heat for 1 to 2 minutes. 
  8. Optional: topped with crispy fried egg, and enjoy!
