Taiwanese Sesame Oil Chicken Soup

Warm up with a comforting bowl of Sesame Oil Chicken Soup, a winter staple in Taiwanese households. Unlike many soups that take hours to simmer, this one is surprisingly low effort and comes together in just under an hour—prep to bowl! Pair it with some sun-dried noodles for an extra hearty meal!

INSTRUCTIONS
  1. Heat a pot and add 3 tbsp of sesame oil, along with the sliced ginger. Cook for 2 minutes. Once it is browned, remove and set aside.
  2. In the same pot, brown all sides of the chicken (2-3 minutes on each side), you may want to do this in batches. Once all your chicken is ready, add back in the ginger, along with Taiwanese rice wine, water, and sugar.
  3. Cover and simmer over medium heat for 30 mins.
  4. Season with salt to taste, stir in the remaining 1/4 cup of sesame oil, and if using goji berries, you can add them now. You can drink it straight up or to make it a full meal, add some sun dried noodles!
